Adobe Acrobat has allowed other software to create and modify the PDF format.
PrimoPDF PDF creation software is freeware.
PDFTextOnline allows you to get text and other content out of your PDF documents.

Yes, I covered PDFCreator in a post at http://computerhelpers.wordpress.com/2008/09/21/pdfcreator-lets-you-make-your-own-pdf-files/ . I just didn’t happen to add it in the list. Thanks for reminding me of this one!
