This is actually Microsoft-legal!

ZDNet has a post on how to Convert student-free Windows Server 2008 R2 into Windows 7.

Windows Server 2008 is the server version of Windows 7.

Students can download this and use it legally, and these instructions show how to make it look and act like Windows 7.

Note: this is a 64-bit only system, so your computer must be able to handle that.  Download it from the Microsoft Dreamspark site.
